Oyster pancakes (called o chien) is a popular dish here and the implementation varies slightly between different eating establishments. I call this one oyster pancake with the chef's "special sauce". I'm sure he is very passionate about his profession and the enthusiasm reflects in the finished dish.
It tasted orgasmic.
